What is your favorite "Mexican" food, sisters?

Despite this quote from usa food experts (below) let's throw them all together.  My favorite is enchiladas.

 Dishes like chili, fajitas, salsa, tortilla chips, corn chips, chimichangas, quesadillas, burritos, and nachos may be great food, but they are home grown American inventions. Even dishes that exist in Mexico like enchiladas, tacos, and tamales are cooked and served differently in the United States.

Good Morning April !!  So glad that Niecey is doing better and may be released today.  I hope that she and her guests have a wonderful time at the prom.

I watch the Amazing Race, but it started several weeks ago.  Contestants got to pick their own "stranger" partners.  At the beginning of the show the individuals had to complete a task, whoever got 1, 2 and so on got to pick in that order who they might like as a partner (having never met before).......sort of a school yard pick.  The two people left over who were not chosen ended up as teammates....and really good ones too. LOL  However, they didn't make it too far into the race.  It is an interesting season, but there is one couple left, who I can't stand....she whines about everything.  I bet her partner wishes he hadn't chose her. LOL  Anyway, hope you can get into the season as it is an interesting idea.

Hey April...so excited for Niecey going to the prom...I know she will have a wonderful time and a nice break from all the "medical" stuff.  Hope she comes home today too...will keep my fingers crossed for that too...

I love enchiladas along with nachos and tortilla chips and cheese dip...but as you said most of them are Tex-Mex style...True Mexican is a bit to spicy for me but my children love authentic Mexican when you can actually find it here.

Good Morning Sisters...Sorry for the delay but we are in the mist of some "severe" thunderstorms and torrential rain...I now have waterfront property as my street is flooded   These thunderstorms are getting quite frequent here and I am not a fan of their severity...Don't get me wrong I love a good old fashion thunderstorm but these are quite powerful...especially when we are "mentioned" on the weather channel...LOL

Happy Cinco de Mayo!
 There are plenty of misconceptions about the May 5 holiday. Is it Mexican Independence Day? Is it celebrated in Mexico at all or is it just a U.S. holiday?
 It turns out that Cinco de Mayo commemorates the day in 1862 when the Mexican army, under the leadership of General Ignacio Zaragoza, conquered the French forces of Napoleon III at the Battle of Puebla. The victory provided a significant morale boost to the Mexican people and came to serve as a symbol of the country's spirit and perseverance.
 The Battle of Puebla pitted 2,000 Mexican troops against 6,000 French. At the end of the day, almost 500 French soldiers were killed while Mexican forces lost less than 100 men. The French retreated though it would take six more years - and more battles - to convince the French to exit Mexico.
 Cinco de Mayo - which literally translates to "May 5" - is not Mexican Independence Day, which is celebrated on Sept. 16, and marks the start of the war of Mexican independence from Spain.
 In the U.S., Cinco de Mayo celebrations were first held in California in the 1860s, marked among the hundreds of Mexican miners who had crossed the border to work in the west. The celebration spread as Hispanic culture grew in the U.S., getting a commercial boost in the 1980s when restaurants and bars began cashing in on the event.
  Cinco de Mayo is not a national holiday in Mexico, though many schools close and a larger celebration is held in the State of Puebla, where the battle took place.
 Some of the largest celebrations in the U.S. are held in Los Angeles and in towns throughout the west. The day is commemorated with celebrations of Mexican cuisine, culture and music.
